The 210 mm long Ittetsu Hokiyama Hamono gyuto chef's knife is a modern take on Japanese blacksmithing customs. The knife's core is a forged Ginsan blade from Hitachi Metals. This premium stainless steel offers outstanding edge retention and balanced hardness for everyday usage by fusing the sharpness of carbon steel with the usefulness of stainless steel. The blade's surface has a matte, slightly gritty texture that resembles pear peel, adorned with a traditional Nashiji pattern. In keeping with the wabi-sabi concept, this not only gives the knife a distinctive, handmade appearance but also keeps food from sticking.
