The best grain size for sharpening European knives is 1000 grit. Stones with grain sizes ranging from 1000 to 3000 grit are excellent for sharpening Japanese blades. The blade is finished on water stones with an index of 8000 units. Additionally, we sell unique sink-friendly stands that can be found in our store. Special fasteners are used to secure the stone to them. Additionally, the majority of Japanese whetstones come with a plastic stand. The water stone's surface may sag over time from repeated use.
