This santoku knife, the Tojiro F-517, is made of 13-chrome stainless steel with a core of powdered high speed steel. It has great wear resistance and edge retention and is highly sharp. The reinforced laminated handle is exceptionally robust, resistant to deformation, and resistant to wear over time. A very hygienic metal bolster keeps the space between the handle and blade free of dirt and stains.
