Japanese chef knife with an 21-cm blade, gyuto Ittetsu. Shirogami Iron Clad steel is used to make the blade. Waterproof mono octagonal walnut handle. Handmade in Echizen, Japan, are Ittetsu knives. Never try to cut, strike, or chop frozen food or bones. The blade may fracture or chip. Wash by hand in warm water, then pat dry. A professional cook or chef needs a Gyuto, which is the Japanese equivalent of a conventional western-style chef's knife.
