Under the management of Atsushi and Takashi Hosokawa, Gihei Hamono is situated in Sanjo, Niigata. Gihei Hamono can work with more recent high performance steels like HAP40 and SLD tool steels in addition to the conventional Hitachi steels. Gihei is well known for their superior heat treatment and holding power. 50/50 ground with a visible, broad bevel; it is thin around the edges, but the grind is low enough to allow for excellent food release.
