Handmade in Takefu, Fukui prefecture, Japan, by recognized traditional craftsman Yoshimi Kato, this is a gyuto chef knife. The traditional Western chef's knife is reimagined in Japanese culture as the Gyuto. Japanese chef knives are known for having thin, light blades that hold their edges well for a long time. The blade is composed of satin-finished SG2 steel. Length of blade: 210 mm. Rosewood is the handle. Never try to cut, strike, or chop frozen food or bones. The blade may fracture or chip. Wash by hand in warm water, then pat dry.
