Ittetsu
Several skilled blacksmiths in Echizen, Japan, create ittetsu knives by hand. The knife blades have an inner layer of Shirogi and are composed of three layers of steel that have been hardened to about 60 HRC. The walnut octagonal grips have a pakka wood clip attached to them. The knives have a more traditional and rustic appearance thanks to the Kurouchi finish.
