Hand-forged blade for sujihiki knife made in Yoshikane Hamono, Japan workshop. Shirogami 2 (White 2) carbon steel with a stainless steel clad makes up the blade. The blade is approximately 41 mm high. Dishwasher washing is prohibited. Japanese kitchen knives feature thin blades that are extremely durable. Cutting any hard products is prohibited.
