One of the most exquisite specimens of Japanese knives is the Gyuto DN-11211, forged by Daisuke Nishida. This is a multipurpose knife that they may use for cutting vegetables and butchering fillets of medium-sized fish with equal ease. Shirogami No. 1 carbon steel is used to create the 165 mm blade through forge welding and black coating. The walnut handle of the Daisuke Nishida Gyuto is octagonal and features a maple ring. The wood used to make the bolster is Macassar ebony. You cannot use the dishwasher to clean this knife. The blades on Japanese kitchen knives are extremely thin and durable.
