Daisuke Nishida creates handmade gyuto DN-11213, a Japanese chef knife. Length of blade: 210 mm. This chef knife's blade is composed of carbon steel from Shirogami. A cherry wood handle finished with a plastic cover completes the look. The D-shaped handle on the framework fits the hand nicely, and it is quite light. It weighs 203 grams. Dishwasher use is not permitted for this knife. Japanese kitchen knives feature thin blades that are extremely durable. Cutting bones and meat with bones, coconuts and other nuts, and other hard goods using Japanese chef knives is prohibited. Because they are handmade, Daisuke Nishida knives may differ slightly from the images and measurements provided.
