Made by Goko Hamono, the Gyuto 240. Using a process known as Sanmai, three layers of steel were used to create this knife (Forge welding). By sandwiching a piece of carbon steel between two pieces of stainless steel, the knife retains its edge and has all the maintenance-friendly qualities of stainless steel while still having the edge retention and cutting feel of carbon steel. If not properly maintained, the 2-3 millimeters of carbon steel that are exposed at the knife's curving edge could corrode and discolor. Octagon handle made of oak. Dry your knives by hand. After washing, this needs to be done right away using a fresh dishtowel. Apply mineral oil and rub. Apply a thin coating of mineral oil and let it to dry if you see any rust spots.
