Ittetsu vegetable knife, Nakiri, 16cm blade. The large rectangular blade of the nakiri makes it simple to move the finely chopped and shredded herbs and veggies to a plate or skillet. Cutting along a vertical line is possible with the straight cutting edge, which also enables a variety of cutting methods like julienne and chiffonade. Sandvik 19C27 stainless steel is used to make the blade. It has a black pakka wood handle. Handmade in Echizen, Japan, are Ittetsu knives. Never try to cut, strike, or chop frozen food or bones. The blade may fracture or chip. Wash by hand in warm water, then pat dry.
