A 17-cm-long Japanese Ittetsu nakiri vegetable knife. The blade is composed of 33 layers of stamped Damascus steel VG10. Pakka wood, a moisture-resistant laminated wood, is used to make the handle. Nakiri is a thin-edged vegetable knife that is not meant for slicing or chopping extremely tough foods. Japan is the manufacturer of ittetsu knives. You cannot use the dishwasher to clean Japanese kitchen knives.
