Santoku, a Japanese cooking knife, made by Gihei Hamono. The chef's knife is known in Japan as a santoku. Made of SLD steel is the blade. Hitachi originally created SLD stainless steel to cut through other steels. As long as carbon steel, it retains its edge just as long, but it is far simpler to maintain. The steel's foundation is SKD11, which has a hardness of 61–63 HRC. There is a magnolia handle on this Gihei Hamono santoku. Never use a dishwasher to clean a Japanese knife. Because of its narrow blade, this knife shouldn't be used on anything that are too hard, including frozen foods or bones.
