The Japanese Gyuto chef's knife made by master craftsman Kenshiro Hatono is a genuine example of traditional workmanship. High-carbon Shirogami #1 (White Steel) steel, one of the purest and most valuable steels in Japan, makes up the core of the 210 mm blade. Known for its remarkable sharpness, ease of sharpening, and capacity to create an incredibly fine cutting edge, the knife's practicality for daily usage is increased by the stainless steel sheaths that protect the core on both sides. The blade's surface is polished in the traditional nashiji technique, which emphasises the piece's authenticity and lessens food sticking when cutting. It has a matte, slightly gritty texture.
