27-cm-bladed Sujihiki Ittetsu Tadafusa OEM Aogami 2 ISN-11 knife. The Aogami #2 blade has a Nashiji finish and is covered in stainless steel. With tungsten and chromium added to help with edge retention and slow down rusting, this is quite similar to white paper steel. To further simplify maintenance, the steel has been covered in stainless steel after being hardened to 62–63 Rockwell. Walnut is used for the handle. You cannot use the dishwasher to clean this knife. Wash by hand in warm water, then pat dry. The blades on Japanese kitchen knives are extremely thin and durable. Bones and meat containing bones, coconuts and other nuts, and other hard items cannot be sliced with Japanese knives.
