Ajikiri is used for vegetables, meat, and small fish. It can also be used as a tiny paring knife. Shirogami #2 carbon steel is used to make the 105 mm polished blade of the Japanese kitchen knife Ajikiri Ittetsu IJS-11101. The Uraoshi blade has a single bevel. Magnolia wood is used to make the oval-shaped handle. Because carbon steel is prone to rust, it needs to be maintained dry and clean at all times to prevent oxidation and discolouration. Wash your hands in warm water and pat dry. Ittetsu knives are manufactured by hand in Japan's Echizen City.
