Nakiri, a Japanese kitchen knife, created by Gihei Hamono. SLD steel with a stainless steel covering makes up the blade. Hitachi originally created SLD stainless steel to cut through other steels. As long as carbon steel, it retains its edge just as long, but it is far simpler to maintain. The steel's foundation is SKD11, which has a hardness of 61–63 HRC. The handle of this Gihei Hamono Nakiri is made of plastic ferrule and magnolia. Never use a dishwasher to clean a Japanese knife. Because of its narrow blade, this knife shouldn't be used on anything that are too hard, including frozen foods or bones.
