In Tosa, Japan, Tsutomu Kajiwara knives are manufactured. At sixty-four, Mr. Kajiwara is a third-generation blacksmith. These knives are excellent buys since they are composed of high-quality Aogami #2 (Blue Paper #2) steel that has been heat-treated and hardened to HRC62.
