Yoshimi Kato, a master craftsman, created this 16.5 cm blade Japanese nakiri knife by hand. A kitchen knife used for slicing and finely chopping vegetables is called a nakiri. The blade is composed of three layers of high-carbon Aogami steel. The handle has a walnut bolster and is constructed of oak. Renowned modern blacksmith Yoshimi Kato is a relative and pupil of renowned master craftsman Hiroshi Kato. This Japanese knife cannot be used as a kitchen cleaver to cut bones and is not dishwasher safe.
