Hand-forged Sujihiki knife in Yoshikane Hamono's workshop, Japan. Shirogami 2 (White 2) carbon steel with stainless steel cladding makes up the 24 centimeter blade. A Japanese double-edged slicing knife is called a sujihiki. handle made of walnut. The blade is approximately 41.5 mm high. Dishwasher use is not permitted for this knife. Japanese kitchen knives feature thin blades that are extremely durable. Cutting any hard products is prohibited.
