Yoshimi Kato's sujihiki, a Japanese slicing knife with a satin-finished ginsan blade. The primary component of Yoshimi Kato's range of blades is Ginsan, or Silver-3, steel. The superior edge qualities of G3 steel are widely recognised. The blade is 270 mm long. Cherrywood handle.
