The blade of this huge Ittetsu gyuto chef's knife is 27 cm. The steel used to make the blade is triple-layered. Two exterior sheaths made of stainless steel shield the Aogami super steel core. The knife is prone to rust even with these sheaths. After use, it should only be cleaned by hand and dried right away. The knife has an octagonal walnut handle, a typical Japanese design. The bolster is composed of ebony. The weight of this Ittetsu chef's knife is about 420 g.
