The Gyuto IWZ-104 from Ittetsu is a great knife for chopping and slicing meat, fish, vegetables, and fruits. Its blade is 21 cm long. The blade has a hammer finish and is composed of premium VG10 Damascus steel. Pakkawood wood is used to make the octagonal handle. You cannot use the dishwasher to clean this knife. Wash your hands in warm water and pat dry. The blades of Japanese kitchen knives are narrow and extremely durable. Coconuts and other nuts, meat with bones, and other hard items cannot be cut with a Japanese knife.
