A classic Japanese kitchen knife with a single-edged sharpening is the Ittetsu Usuba IJS-11143. The Usuba was created especially to cut vegetables. Shirogami #2 carbon steel is used to make the 210 mm blade. Magnolia wood is used to make the oval handle. The knife should be kept dry and clean because carbon steel is prone to oxidation. Wash your hands only in warm water, then pat dry completely. Ittetsu knives are made by hand in Echizen, Japan's Fukui Prefecture.
