The Ittetsu Usuba knife has a 165 mm blade. Usuba is a vegetable-slicing and shredding knife with single-sided sharpening. Shirogami #2 carbon steel is used to make the blade. The knife weighs 310 grams. Magnolia wood is used to make the oval wa handle. The knife needs to be kept dry and clean because carbon steel is prone to corrosion. It is only permitted to wash your hands in warm water and to wipe them dry. Ittetsu knives are made by hand in Echizen, Japan's Fukui Prefecture.
