Shiraki Hamono in Japan The Honyaki kitchen knife is created entirely by hand. The blade is 240 mm long. Shirogami Japanese carbon steel is used to make the blade. Making an honyaki knife takes a great deal of time and skill. A knife like this can only be made by a select few artisans worldwide. The word "honyaki" means "properly forged."
Honyaki is made completely of one piece of steel. A knife is extremely challenging to forge and shape. To disperse carbon uniformly, steel is repeatedly rolled and forged.
At the cutting edge, the honyaki knife is unevenly tempered to higher values (up to HRC64-66). The boundary between components with varying levels of hardening is apparent in reflected light and is referred to as jamon. Professionalism is necessary when using and honing the Japanese Honyaki knife.
