Ittetsu Santoku knife, 165 mm blade. Three layers of material make up this santoku: iron clad, Shirogami steel, and steel. a layer of carbon steel at the center that is shielded from the outside by a layer of iron, a process known as forge welding or Sanmai. Both carbon steel and iron are prone to rust and need to be kept dry and clean at all times to prevent discoloration and oxidation. Depending on who you ask, the term "santoku" means "three virtues" and refers to slicing, dicing, and chopping of meat, fish, and vegetables. Waterproof mono octagonal walnut handle. Handmade in Echizen, Japan, are Ittetsu knives. Never try to cut, strike, or chop frozen food or bones.
