Both carbon steel and iron are prone to rust and need to be kept dry and clean at all times to prevent discoloration and oxidation. Depending on who you ask, the term "santoku" means "three virtues" and refers to slicing, dicing, and chopping of meat, fish, and vegetables. Waterproof mono octagonal walnut handle.
