Nakagawa Satoshi hand-forged this sujihiki slicer. The ginsan silver 3 steel blade of the sujihiki knife. Ginsan steel, sometimes referred to as Silver-3 or Ginsanko, possesses superior stainless qualities. This stainless carbon steel has 14% more chromium added to it. Ginsan has nearly the same edge retention and a toughness comparable to Shirogami #2. The wood used for the handle is bubinga. The blade is roughly 34.5 mm high. Dishwasher use is not permitted for this knife. Japanese kitchen knives feature thin blades that are extremely durable. Cutting bones and flesh with bones, coconuts, or other hard goods using Japanese chef knives is prohibited.
