The Seki Kanetsugu Pro J series Japanese sujihiki slicing knife has a 21-cm blade. Sujihiki is a double-edged slicing knife with a long, thin blade that cuts through meat or vegetables with ease while maintaining the freshness of each ingredient. Mr Kawamura of Kanetsugu has unveiled the cutting-edge Pro J Series line of kitchen knives after years of study into the best practical materials and designs.
The construction of the Hammer Forged Tsuchime Blade is cladding. The blade core is composed of AUS-2 stainless steel and ZA-18, a special high-grade cobalt steel from Aichi Steel Company. This kitchen knife is the first to employ the new ZA-18 formula steel.
