Sakai Takayuki created this line of Japanese knives especially for use in professional kitchens. Additionally, it's ideal for people who are unfamiliar with Japanese knives or who don't want to take the effort to maintain them. These knives are hygienic and simple to clean due to the materials utilised. This yanagiba knife for sashimi and sushi has a stainless steel blade. Although it is composed of a unique rubber instead of wood, the handle has a conventional design. If necessary, the knife can be cleaned in the dishwasher. However, as this might quickly dull the blade, we do not advise doing this repeatedly.
