Santoku Seki Kanetsugu is a professional kitchen knife. The blade is manufactured of Molybdenum alloy high carbon stainless steel with a traditional "Hamaguri ba" (convex edge grind), which is renowned for its exceptional sharpness, durability, and ease of resharpening. After heat treatment, the blade is Sub Zero quenched, which chills it to 70 degrees to prolong edge retention and strength against chipping and brittleness. With great pleasure, Seki Kanetsugu introduces the Hollow Handle version made of stainless steel. This lightweight, well-balanced 18-8 hollow stainless steel handle features a pleasant round grip and the classic Katana handle pattern, which also creates a non-slip grip. Stainless steel handles have the advantages of being hygienic, seamless, and long-lasting.
